As a child, spinach was the last thing I wanted to see on my plate. It belonged in Popeye jokes or as a secret treat for the dog under the table. These days, though, I can’t get enough of it.
These Cheesy Quinoa Spinach Cups are quick, versatile, and kid-friendly. They’re simple enough to prepare any night of the week, and children can help assemble them (with adult supervision for the oven). I find that when kids help make a dish, they’re more willing to try it—so if your little ones are skeptical about spinach, this recipe is a great place to start.

Ingredients:
2 cups cooked quinoa
1 cup mild shredded cheddar cheese
1 bunch green onions, diced
1 cup fresh spinach, tightly packed and chopped
1 egg (optional, for extra protein and to help bind)
salt & pepper to taste
Directions:
1. Preheat the oven to 350°F (175°C) and spray a 12-count muffin tin with non-stick cooking spray.
2. In a mixing bowl, combine the cooked quinoa, shredded cheddar, diced green onions, chopped spinach, and the optional egg if using. Season with salt and pepper.
3. Stir until the ingredients are evenly mixed.
4. Spoon the mixture into the prepared muffin tin, pressing gently to compact each cup.
5. Bake for 20–25 minutes, until the tops are golden and the cups are heated through. Let cool a few minutes before removing from the tin.

*Yields approximately 7–8 cups. One cup equals one serving.
