Why use lemons?

Choose ripe, juicy organic lemons when possible. Their fresh acidity defines classic lemonade and gives the drink its lively backbone.

Want it less tangy?

Add more water to dilute the acidity, or stir in a splash of orange juice for a sweeter, rounder citrus profile.

Vanilla pod or extract?

A vanilla pod delivers fragrant seeds and a subtle depth of flavor; add both the seeds and the emptied pod to your syrup while it simmers. If you don’t have a pod, substitute 1 teaspoon of pure vanilla extract.

Garnish ideas

Simple garnishes make a big difference: thin lemon wheels, a sprig of fresh mint and plenty of ice make the drink look inviting and taste extra fresh.

How to Make It in 4 Easy Steps

Whisk sugar and hot water in a saucepan
  1. Step 1 — Make the syrup: Combine water and sugar in a saucepan and heat gently until the sugar dissolves.
Put the vanilla pod in the sugar water.
  1. Step 2 — Add vanilla: Split a vanilla pod, scrape out the seeds and add both seeds and pod to the hot syrup. Simmer briefly to infuse, then remove from heat and cool.
Squeeze lemon halves for fresh lemon juice
  1. Step 3 — Squeeze lemons: Juice fresh lemons for the brightest, cleanest flavor.
Add vanilla sugar water to the fresh lemon juice
  1. Step 4 — Mix and chill: Strain and cool the syrup, then combine it with the lemon juice in a large jug. Add water to taste and refrigerate for at least an hour so flavors meld.

Serve in style: Fill glasses with ice, pour the lemonade over and garnish with lemon slices and mint for a crisp, summery presentation.

What goes well with vanilla lemonade?

  • Light savory bites: cucumber and smoked salmon sandwiches, fresh rye or crispbread, and a seasonal fruit platter.
  • Sweet treats: warm scones with berries, shortcakes, or simple cookies for an afternoon tea vibe.

Top tip

Fizzy version: Swap still water for sparkling water just before serving for a bubbly twist that keeps the vanilla aroma bright.
