Homemade vegan soup
Making lentil soup at home yields better flavor and nutrition than most store-bought versions. This recipe is low in fat, packed with vegetables and fiber, and makes a satisfying, wholesome meal.

History of lentil soup (for me)
When I first became a vegetarian I discovered a small soup shop that served the best lentil soup. That bowl convinced me to love lentils. This recipe is my simple take on that comforting, humble soup.
The perfect winter soup
This soup is ideal any time you want something warm, nutritious, and satisfying—especially if you’re working toward healthier eating goals. It’s filling, nourishing, and easy to prepare.

Vegetable broth
I like to make my own vegetable broth from saved scraps—it’s simple and adds depth to soups. If you prefer convenience, use a good-quality store-bought vegetable broth. Chicken broth can be used interchangeably if you aren’t cooking for vegetarians, but check seasoning and add salt as needed if your broth is low-sodium.

Can lentil soup be frozen?
Yes. This soup freezes well and makes a convenient, protein-rich meal to keep on hand. Portion into individual containers for quick reheating, or thaw in the refrigerator before reheating on the stove or in the microwave.
How long can I store this soup in the fridge?
Stored in a tightly covered container, cooked lentils and lentil soup are best eaten within 2 to 5 days.

Is lentil soup good for diabetics?
Lentils are high in fiber and a good source of plant protein, making them a sensible choice for many people with diabetes. Always follow personalized medical advice from your healthcare provider.
Are lentils part of a low-carb keto diet?
Lentils are relatively high in carbohydrates compared with vegetables and are not considered keto-friendly. However, they are low in fat, high in fiber, and can support weight loss efforts by promoting fullness without excessive calories.
Serve this lentil soup with
Enjoy a bowl with a fresh salad, a warm slice of bread, or a biscuit for a complete meal. Simple sides like roasted vegetables or a whole-grain loaf pair nicely with the soup.
