My children immediately asked for two traditional dishes: our family’s Italian stuffing and, unsurprisingly, mashed potatoes. Because they love mashed potatoes so much, I tested this Slow Cooker Mashed Potatoes recipe on them over the weekend — and it was an instant hit.

Slow Cooker Mashed Potatoes {and free Thanksgiving e-cookbook from Produce For Kids}

Yield: serves 6

Prep Time: 10 minutes

Cook Time: 4 hours

Ingredients:

  • 1½ cups cauliflower florets
  • 1½ lbs. red potatoes, quartered
  • ½ sweet onion, chopped
  • 1 garlic clove, finely chopped
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 cup Greek yogurt
  • 1 tsp. parsley, chopped

Directions:

  1. Pulse the cauliflower in a food processor until it is finely chopped.
  2. Place the cauliflower, quartered potatoes, chopped onion, 1 cup water, garlic, salt, and pepper into the slow cooker. Cook on high for 4 hours, or until the potatoes are tender.
  3. Use a hand mixer to blend in the Greek yogurt until the mixture is smooth and well combined. Finish with chopped parsley on top and serve warm.
