Who doesn’t love banana bread? If you end up with a bunch of overripe bananas, don’t limit yourself to a classic loaf—turn the batter into waffles instead.

These waffles are soft inside with crisp edges, and adding mini chocolate chips makes them irresistibly indulgent.

I made these for brunch recently and honestly I don’t think I’ll go back to plain waffles. They’re perfect with maple syrup and fresh fruit for a satisfying morning meal.

This recipe yields about 10–12 waffles. I like to freeze any extras in a resealable bag so I can pop them in the toaster for an easy post-workout or busy-morning treat.

It uses fewer than ten ingredients. Mini chocolate chips are optional but highly recommended. I use a small waffle iron that makes 6–7 inch waffles.

Today there’s also a giveaway to celebrate this recipe!

Prep Time 15 minutes
Cook Time 2 minutes
Total Time 17 minutes

Ingredients

  • 1 2/3 cup all-purpose flour
  • 1 tsp. ground cinnamon
  • 1 tsp. baking soda
  • 1/2 cup (one stick) butter, melted
  • 3 overripe bananas
  • 2/3 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1 tsp. vanilla extract
  • 2/3 cup mini chocolate chips

Instructions

  • Preheat your waffle iron. In a medium bowl, whisk together the flour, cinnamon, and baking soda; set aside. In a large bowl, mash the overripe bananas with a fork. Add the melted butter, sugar, egg, and vanilla, stirring until well blended. Fold in the flour mixture until just combined, then fold in the mini chocolate chips.
  • Spray the waffle iron with nonstick spray. Using a 1/4-cup scoop, fill the iron with batter and cook until golden brown or until the iron indicates the waffle is done. Transfer finished waffles to the oven and place directly on the oven rack to keep warm while you finish the remaining batter. Serve warm with syrup.
