Ingredients

  • 1 bunch Swiss chard, diced (thick ribs discarded)
  • 2 tsp extra virgin olive oil
  • 1 clove garlic, minced
  • 1 cup quinoa, uncooked
  • 1 1/2 cup grape tomatoes, halved (mix of red and yellow if available)
  • 1 roasted red pepper, small dice
  • 1 small carrot, finely shredded
  • 1 green onion, thinly sliced
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste
  • 4 large eggs
  • Cooking spray (or a little oil for the pan)
  • 2 tsp fresh lemon juice
  • 1 Tbsp extra virgin olive oil

Instructions

  • Cook the quinoa according to package directions. One simple method is to boil it for about 15 minutes in plenty of water, drain well, cover to steam 5 minutes, season with salt, then fluff with a fork.
  • In a large nonstick sauté pan, heat 2 teaspoons olive oil over medium heat. Add the minced garlic and cook briefly until fragrant. Add the diced Swiss chard, a pinch of salt, and 2 tablespoons water. Cook, turning occasionally, until the chard is wilted and the liquid has evaporated. This softens the ribs and reduces bitterness. Remove from heat and set aside.
  • In a large bowl, whisk together the vinaigrette: 2 teaspoons lemon juice, 1 tablespoon olive oil, and a pinch of salt and pepper. Add the cooked quinoa, sautéed Swiss chard, roasted red pepper, shredded carrot, and sliced green onion. Toss to combine. Gently fold in the halved tomatoes and adjust seasoning with salt and pepper as needed.
  • Heat a clean nonstick pan, spray lightly with cooking spray or add a small amount of oil, and cook the eggs over-easy so the yolks remain runny. Season the eggs with a little salt and pepper while they cook.
  • Divide the quinoa and Swiss chard mixture among four bowls. Top each bowl with a cooked egg and serve immediately, breaking the yolk to dress the salad as you eat.
