Crispy Roast Duck: How to Get Perfect Crackling Skin

This easy Crispy Roast Duck recipe will become your go-to when you want tender, moist meat paired with an ultra-crispy skin.

Crispy Roast Duck Recipe

Achieving a perfectly crispy duck skin while keeping the meat moist is straightforward when you follow a few simple principles. This recipe lays out the key techniques—drying the skin, salting, using a rack for airflow, and managing oven temperature—so you can reliably get crunchy skin and succulent meat every time.

1/ Dry the duck skin

Any surface moisture on the duck will steam in the oven and prevent the skin from crisping. Pat the entire bird thoroughly with clean paper towels, inside and out. For best results, allow the duck to sit uncovered in the refrigerator for an hour or two after patting dry; this further helps the skin dry out and improves crisping.

2/ Salt = crispy skin

Once the skin is dry, massage sea salt over the entire duck. Work the salt into every crease and cavity so it contacts the skin directly. Salt draws out residual moisture and helps the skin to dehydrate and crisp in the oven. If you like, add a light dusting of your favourite spice blend at this stage for additional flavor—just be careful not to overload the skin so it doesn’t burn during cooking.

3/ Use a rack in your baking dish

Place the duck on a wire rack set inside a roasting tin or baking dish. Elevating the bird allows rendered fat to drip away and ensures hot air circulates around the whole duck, promoting even browning and a uniformly crisp skin. If you don’t have a rack, use a bed of root vegetables to lift the duck slightly above the pan base.

4/ Start hot, then reduce the heat

Begin roasting at a higher temperature to trigger rapid browning and crisping of the skin. After an initial hour at higher heat, lower the oven temperature and continue cooking slowly until the meat is tender. This two-stage approach locks in moisture while producing a crunchy outer layer without burning the skin.

In my kitchen I often roast a 1.5kg Cornish duck, rubbed with sea salt and a light spice blend. Ingredients

  • 1.5 kg duck, free range
  • 1 tbsp sea salt (more to taste)
  • 1 tbsp favourite spice blend (optional)

Instructions

  1. Preheat the oven to 180°C / 350°F / Gas 4.
  2. Pat the duck dry with paper towels, ensuring no visible moisture remains. For even better results, let the duck rest uncovered in the refrigerator for an hour to further dry the skin.
  3. Rub the salt (and the spice blend if using) thoroughly over the entire bird, including the wings, legs and cavities. The salt helps draw out moisture and encourages crisping.
  4. Place the duck on a rack set inside a roasting tin and roast for one hour. The elevated position allows fat to drip away and air to circulate, improving crispness.
  5. Carefully remove the tin from the oven and drain off excess fat. Reduce the oven temperature to 140°C / 275°F / Gas 1. Return the duck to the oven and continue to cook for a further three hours, occasionally draining accumulated fat. If the skin begins to darken too quickly, loosely tent the duck with foil to prevent burning.
  6. When cooking is complete the skin should be golden and crisp, and the meat tender enough to fall off the bone.
  7. Allow the duck to rest for 15 minutes before shredding the meat with two forks. Serve as desired—whole, carved, or shredded for tacos, salads or rice bowls.
