Step up your breakfast game with these Chocolate Chip Banana Bread Waffles! They’re such a treat!

Who doesn’t love banana bread? If you end up with a bunch of overripe bananas, don’t limit yourself to a classic loaf—turn the batter into waffles instead.
These waffles are soft inside with crisp edges, and adding mini chocolate chips makes them irresistibly indulgent.

I made these for brunch recently and honestly I don’t think I’ll go back to plain waffles. They’re perfect with maple syrup and fresh fruit for a satisfying morning meal.

This recipe yields about 10–12 waffles. I like to freeze any extras in a resealable bag so I can pop them in the toaster for an easy post-workout or busy-morning treat.
It uses fewer than ten ingredients. Mini chocolate chips are optional but highly recommended. I use a small waffle iron that makes 6–7 inch waffles.
Today there’s also a giveaway to celebrate this recipe!

I’ve been a fan of Michael Laico’s work at Michael’s Woodcraft for years. He crafts beautiful serving boards, catchall trays, wine stoppers, ice cream scoops and more. His pieces are well made and have become cherished items in my home.
When Michael offered to collaborate on a giveaway, I was thrilled. His items make lovely gifts and practical kitchen pieces.

The board shown in the photos is a walnut serving board Michael made for me. It’s perfect for styling photos and doubles as a handsome serving piece when guests come over.

For the giveaway Michael created a 12-inch round walnut board with a handle and inlays on one side. It’s a beautiful, functional piece any home cook would appreciate.

The giveaway is open to U.S. residents. To enter, follow the Instagram accounts mentioned in the original post, like the giveaway photo, and tag a friend in the comments. Good luck—and enjoy the waffles!

Ingredients
- 1 2/3 cup all-purpose flour
- 1 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/2 cup (one stick) butter, melted
- 3 overripe bananas
- 2/3 cup granulated sugar
- 1 large egg, lightly beaten
- 1 tsp. vanilla extract
- 2/3 cup mini chocolate chips
Instructions
-
Preheat your waffle iron. In a medium bowl, whisk together the flour, cinnamon, and baking soda; set aside. In a large bowl, mash the overripe bananas with a fork. Add the melted butter, sugar, egg, and vanilla, stirring until well blended. Fold in the flour mixture until just combined, then fold in the mini chocolate chips.
-
Spray the waffle iron with nonstick spray. Using a 1/4-cup scoop, fill the iron with batter and cook until golden brown or until the iron indicates the waffle is done. Transfer finished waffles to the oven and place directly on the oven rack to keep warm while you finish the remaining batter. Serve warm with syrup.
