St. Patrick’s Day is tomorrow, and we’re celebrating with a dairy-free shamrock shake to start the day. Yes, it looks like a treat, but this isn’t a typical ice cream shake. It’s dairy-free, naturally green, and made without ice cream—so it’s lighter and kid-friendly while still delicious.

This shake is surprisingly quick and easy. I needed a green drink for the kids and blended this from start to finish in about 10 minutes. It’s simple, healthy, and festive—perfect for St. Patrick’s Day morning. Below is the full recipe so you can make it too. Enjoy!

Start by blending the fresh spinach with 1/4 cup of almond milk until it’s smooth and evenly green.

Pour the shake into serving glasses and place them in the freezer for about 10 minutes to chill while you prepare toppings.
-
For cookie crumbles, crush three chocolate cookies in a sealed plastic bag using the bottom of a glass or bowl. Set aside.

Remove the glasses from the freezer, add a layer of cookie crumbles if using, then top with whipped dairy-free topping.
-
Finish with a few green sprinkles for extra flair, if desired.
-
Serve immediately and enjoy your dairy-free shamrock shake!
Recipe Notes
Peppermint extract is potent. If you scale the recipe, add the extract gradually—taste after adding the initial 1/4 teaspoon and increase in 1/4 teaspoon increments until it reaches the mint level you prefer.
If you want a quick dairy-free frosting for the topping, you can use a simple two-ingredient recipe for a light whipped finish.
