We’re a family of hunters (and occasional gatherers), so when deer season arrives we bring out the venison. Venison substitutes beautifully for beef in most recipes — it’s flavorful, versatile, and much leaner.

We rarely buy beef; venison fills most of our recipes that call for ground or sliced red meat. It tastes great, cooks well, and is a healthier option for many meals.

What is Venison?

Historically, “venison” referred to wild game meat in general. Today, it most commonly means the meat of deer or antelope. In short, venison is the edible meat, while “deer” names the animal.

Deer Processing

Processing a deer means removing and preparing the meat from the carcass. Many hunters process deer at home: roasts can be vacuum-sealed, steaks wrapped, and tougher cuts ground for versatile use. A good meat grinder makes ground venison easy to package and store.

We also enjoy having specialty items made from venison, like sausages (green onion is a favorite), burritos, tamales, jerky, and snack sticks. Antlers can be mounted, turned into rattles for calling, or used as durable dog chews.

Is Venison Healthy?

Absolutely. Venison is significantly leaner than beef — often around 50% leaner — while still offering high-quality protein. If you’ve hunted and processed the animal yourself, the meat is especially clean and natural, reflecting the deer’s diet in the wild.

How To Cook Venison

Venison adapts to many cooking methods: grilling, slow cooking, braising, smoking, and quick pan-searing. Because it is lean, it benefits from techniques that add moisture — marinades, gentle heat, bacon wrapping, or combining with fattier meats for dishes like meatballs and burgers.
