BLACK CROW HALLOWEEN CAKE

Supplies:
Red velvet cake layered and frosted with vanilla buttercream (six‑ and eight‑inch rounds recommended)
Mini bird cookie cutter
Parchment paper
Rolling pin
Small knife
Small offset spatula

For the Crow Cookies:

8 ounces unsalted butter, softened
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon pure vanilla extract
1 large egg
1/2 cup black cocoa (or regular cocoa powder plus black gel food coloring)
2 1/2 cups all‑purpose flour

  1. Preheat the oven to 350°F and position a rack in the center. Line a baking sheet with parchment paper.
  2. In a stand mixer fitted with the paddle attachment (or in a large bowl with a hand mixer), beat the butter, sugar, baking powder, salt, and vanilla until light and fluffy, about 5 minutes, scraping the bowl occasionally.
  3. Add the egg and mix until combined, scraping the bowl as needed.
  4. With the mixer on low, add the flour and cocoa (and gel coloring if using) until just incorporated. Avoid overmixing.
  5. Roll the chocolate dough between two sheets of parchment to about 1/8‑inch thickness. Place the rolled dough on a baking sheet and chill for at least 15 minutes to firm up.
  6. Remove the top layer of parchment and cut at least two dozen bird shapes. Transfer the birds to a parchment‑lined sheet using an offset spatula. Pinch the beaks to form sharper points if your cutter leaves rounded tips. If the dough softens, chill again for about 10 minutes. Wrap and refrigerate unused dough for up to a week or freeze for up to three months.
  7. Bake for 7–9 minutes. Let the cookies cool on the baking sheet until they are cool to the touch, about 20 minutes.
  8. Use the cookies immediately or store in an airtight container in a cool, dry place for up to a week.
