This week the girls return to a full week of school for the first time since before Christmas. I suspect the transition will be a shock — mostly for me. I’ve enjoyed slow mornings at home in pajamas and comfy clothes, but routines resume and the house will feel busier again.
We’re also bracing for another round of extreme winter weather. Andy and I agreed we’re ready for winter to be over. We enjoy snow and cold, but this season’s deep freeze has been especially harsh. I’m dreaming of backyard dinners, bike rides, and park visits — surely spring can’t be far off.
Here’s what we’ll be eating this week:
Meatless Monday: Pancakes. I promised my carb-loving middle child pancakes for dinner last night, but when I went to the kitchen I discovered I had less than a quarter cup of flour. To make it up to her, pancakes are on the menu tonight. I’ll share the recipe soon.
I designate Monday as our family’s meatless night because it’s budget friendly and better for the environment. My meat-and-potatoes husband goes along with it — especially when I make a special dessert to accompany the meal. What can I say? I like to keep everyone happy.
Tuesday: Slow Cooker Chicken Parmesan Sandwiches. We haven’t had these in a while and I love being able to put everything in the slow cooker in the morning while the kids eat breakfast, then not worry about dinner until it’s time to eat.

Wednesday: Slow Cooker Lentil and Brown Rice Tacos. I adore these tacos. Once I started making this filling, I rarely went back to using ground beef for tacos.

Thursday: Easy Chicken and Dumpling Soup. With a forecast high of 16, it’s definitely a night for soup. This recipe is comforting, simple, and reliably delicious.

Friday: Pizza. Friday is game night at our house, and it’s also the day before Camryn’s birthday party that we’re hosting. I’ll be doing last-minute prep, so pizza makes for an easy, crowd-pleasing dinner.
