This cookie was inspired by our Microwave Peanut Butter Chocolate Chip Cookies and the variations that followed, like Wild Blueberry Cookies and Minute Oatmeal Raisin Cookies. With just a few minutes of prep and a short microwave or oven bake, you can make a wholesome, satisfying treat using ingredients you likely already have at home.   4. If making four cookies: lightly grease a plate, use four small bowls or four ramekins for uniform shape. Scoop about 2½ tablespoons of the mixture for each cookie and flatten slightly. Press pineapple tidbits and white chocolate chips into each portion.
  5. Microwave the plate or ramekins on high for about 4 minutes. Microwaves vary—test doneness by inserting a toothpick or fork through the center; if it comes away wet, continue cooking in 30 second intervals until set.
