Slow Cooker Beef Brisket with Rich Pan Gravy

My tried-and-true Slow Cooker Brisket with gravy is absolutely the best for a relaxed Sunday meal. A brisket cooked slowly in a crockpot becomes meltingly tender, and the gravy—rich, meaty and full of cooking juices—is irresistible.

Slow cooking transforms a tough cut of beef into a succulent, fork-tender roast. The gravy absorbs the deep beef flavour and becomes thick and luxurious; you’ll want to serve it generously with roast potatoes and seasonal vegetables for a comforting family dinner.

  • Carrots – small to medium carrots, scrubbed and chopped (peel if preferred).
  • Beef brisket joint – a budget-friendly, flavorful cut that becomes tender with long, slow cooking.
  • Hot beef stock – to pour over the meat and vegetables for moist cooking and a flavourful gravy.

How To Make Slow Cooker Brisket

Prep Time – 10 minutes / Cook Time – 8 hours (approx)

  1. Lightly grease the inside of the slow cooker with the olive oil.
  2. Add a layer of vegetables and then the brisket – scatter the chopped onions across the bottom of the slow cooker, place the carrots on top, then lay the brisket joint over the vegetables.
  1. Pour over the hot beef stock, cover and cook on low for about 8 hours, or until the meat is thoroughly cooked and very tender. Season with a pinch of salt if needed.
  2. To thicken the gravy – remove the brisket and carrots, then stir a teaspoon of cornflour mixed with a little cold water into the cooking liquid. Simmer over medium-high heat until the gravy thickens to your liking.

TOP TIPS FOR MAKING SLOW COOKER BRISKET AND GRAVY

⭐ Add extra vegetables for a genuine one-pot meal — new potatoes or other root vegetables work well.

⭐ Check the brisket around the 8-hour mark. Overcooking can make it dry or chewy, so test for tenderness and remove when it’s falling-apart soft.

⭐ Leftovers are excellent in sandwiches: pile pulled brisket into a baguette with mustard and onions, or use leftover gravy for French dip-style rolls.

Super easy pot roast that’s perfect for a traditional Sunday dinner the lazy way.

Ingredients

  • 2 tsp olive oil
  • 2 onions
  • 4 carrots
  • 1.5kg brisket joint
  • 300ml beef stock

Instructions

  1. Grease the inside of the slow cooker pan using the olive oil
  2. Add the chopped onions to the bottom of the slow cooker pan.
  3. Lay the carrots on top of the onions
  4. Lay the brisket joint on top of the vegetables
  5. Pour over the hot beef stock
  6. Cook on slow for around 8 hours until the beef is cooked through properly and super tender.
  7. To thicken the gravy – remove the beef brisket and carrots then thicken using a tsp of cornflour that’s been mixed with a drop of cold water – simmer over a medium heat until gravy thickens.

  • You can add extra vegetables to the pot for a full one-pot meal—new potatoes or other root veg work well.
  • Check the brisket after around 8 hours; remove once it’s tender to avoid drying out.
