One of my favorite parts of summer is wandering local fairs and farmers’ markets. Navajo tacos are often available and are delicious, but they can seem like a lot of work. This recipe simplifies the process: the dough doesn’t need to rise and you don’t need a deep pool of oil to fry the bread.

Easy Baking Powder Fry Bread Recipe {Clean Eating}

I usually add just enough oil to coat the bottom of the pan, though you can use more if you prefer. Because this dough relies on baking powder rather than yeast, it pulls together quickly and cuts down the prep time significantly.

My kids love rolling their own pieces of dough, and I fry them while they argue over who gets the first piece. They eat them almost as fast as I can make them — and they fry up quickly.

I’ve made this recipe with regular white flour, spelt, and einkorn. Each flour absorbs liquid differently: white flour often needs about 1 cup of milk, while spelt usually needs slightly less and einkorn typically needs about 1/4 cup less. I add milk gradually until the dough reaches a workable consistency — not sticky and easy to knead.

I don’t typically use whole wheat for this recipe, but if you make the swap you will likely need more liquid and should let the dough rest for 10 minutes instead of 5. That extra rest helps the flour hydrate so the fry bread won’t be dry or gritty.

As an alternative to hand mixing, you can pulse the dry ingredients in a food processor on the dough setting and add milk slowly until the dough forms a ball. It’s a quick, hands-off option that many find helpful.

Description

Ingredients

  • 2 Cups white einkorn flour
  • 1 Tbl baking powder
  • 1 tsp Real Salt
  • 1 Cup whole milk
  • 2 Tbl oil for frying (avocado oil recommended for its high smoke point)

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt.
  2. Stir in the milk a little at a time until the dough comes together. The exact amount of milk will vary by flour and brand; einkorn typically needs less liquid than white flour.
  3. If needed, add a bit more flour so the dough is manageable. On a floured surface, knead until smooth, about 5 minutes, then let the dough rest for 5 minutes (or 10 minutes if using whole wheat).
  4. Heat oil in a large, heavy skillet to about 365°F (180°C). Use enough oil to coat the bottom of the pan or up to 1 1/2 inches deep, depending on how you prefer to fry.
  5. Break off pieces of dough about 3/4 cup in size and shape into discs about 1/4 inch thick, pressing the center slightly thinner. Fry the discs in hot oil until golden on both sides, turning once. Drain on paper towels and serve warm.
